First, with the outbreak of animal and poultry diseases such as mad cow disease, avian influenza and severe food crises such as agricultural product residues, the food safety crisis has become the focus of global attention; Secondly, in China, as the Sudan Red duck egg and Sanlu milk powder incident led to a crisis of food trust, people urgently need to find a reliable way to ensure the reliability of food, and Food Traceability Technology came into being; Finally, from the rise of "No. 1 native pork" and organic vegetables, it can be seen that food safety has increasingly become the most basic guarantee of life, and the pursuit of food quality has become the goal of people's life.
 
        The development of food traceability technology can not only increase the supervision of food safety, rebuild the reliability of the food system, but also provide symmetrical information for consumers in an open and transparent manner. According to one data, in 2017, the online shopping users of fresh food in China paid 92.8% attention to food safety. Another statistical data shows that urban residents are willing to pay a 30% premium for buying safe agricultural products and food. How to meet the needs of consumers for food safety and quality is an important issue in the food industry. The development of Food Traceability Technology provides a practical implementation mechanism for this topic. At present, the international interpretation of food traceability is different.
 
        According to the international Codex Alimentarius Commission (CAC), food traceability refers to the ability to track the operation of food in the process of food production, processing and distribution. The international organization for Standardization (ISO) defines food traceability as the ability to trace or trace the source, application and location of products within the scope to be considered. However, no matter which definition, it emphasizes the traceability of food information and operation during the process of food production and sales. The development of blockchain technology provides a reliable, effective and convenient way for this demand. Blockchain has the characteristics of decentralization, distribution, transparency, non tampering, anti-counterfeiting and traceability, security and programmability. The application of blockchain technology in the field of food safety can improve the reliability of food operation information and provide a forward tracking and backward tracking path for food transmission.
 
        The traceability chain formed by smart contracts and distributed nodes can ensure the integrity, reliability and traceability of food information. The blockchain digitizes and links the information through the digest of the hash function, so that the information can maintain integrity and traceability. The data is collected by intelligent sensors and transmitted to the upper layer protocol. The communication layer mainly includes network structure and protocol. The communication layer of the traceability system based on the blockchain technology is through the Ethereum platform and telehash information transfer protocol. The database layer mainly refers to the distributed storage database. Each record in the blockchain contains a time stamp and a unique encryption signature.
